kernel: remove CONFIG_GPIO_MCP23S08 from default kernel configs

The kernel config option 'CONFIG_GPIO_MCP23S08' no longer exists.
Therefore, it is removed from the generic kernel configuration for
linux-5.10 and linux-5.15.
